BANQUET MENU OPTIONS

Soup:
Luna's Local Tortilla Soup: roasted jalapeno, tomato, fresh cilantro, pico de gallo, crisp tortilla strips, and pepper jack cheese

Entrees:
Chipotle BBQ Glaze Salmon with scallion and Yukon potato mash and southern greens
Roasted Eggplant with yellow tomato bruschetta, green pea rice cakes, smoked sweet pepper coulis, and seasonal vegetables
Stuffed Chicken with Chorizo (a spicy Mexican sausage) with spinach and queso fresco, smoked tomato chutney, and Ancho chili-roasted fingerling potatoes
